Bread is truly a universal food. Every cuisine has some variation of it, whether it’s flat or yeast-raised, oven-baked or pan-friend. Several years ago, I taught a series of classes for elementary school students called “Breads From Around the World,” which, as you can guess, explores global cultures through bread-baking. This got me thinking about creating a database of all the world’s bread variations – including the cultural traditions surrounding them and even bread-related stories told by immigrants here in New York.
